The Recipe

Umbuzada sertaneja

Serves 4

Nutritional value per serving:

• Calories: 136 • Fat: 2.3g • Carbs: 27.4g • Protein: 3.6g

Ingredients:

  • 270g green umbus
  • 240ml water
  • 360ml milk
  • 64g sugar

Cooking instructions:

  1. Bring water to the boil.
  2. Wash umbus, then remove stems and cook in boiling water for 5 minutes or until the water almost dries up and the umbus have a soft texture.
  3. Mix the milk, sugar and umbus.
  4. Cook until the umbus begin to dissolve, or for about 3 minutes.
  5. Sieve the pulp to remove the seeds.
  6. Serve hot or cold.

To prepare umbu ice cream

Freeze the mixture from previous recipe and process in an ice cream maker for around 25 minutes.
