“Always keep the principles of hospitality high. Hospitality is the science around which everything revolves.”
Cook, entrepreneur, collector, restaurateur and revolutionary – these are just some of the words Chef Antonello Colonna uses to describe himself. Roman in spirit and origin, Antonello is a strong believer in hospitality. His journey kicked off in 1985, when he took over his family’s trattoria, changed the name to Antonello Colonna and revolutionized the menu – all the while maintaining local gastronomic traditions.
This successful start led to the establishment of his own restaurant in Labico, on the outskirts of Rome, where he shifted from gourmet chef to farmer chef. He maintains a strong connection to his Roman roots, but is driven by an entrepreneurial vision.
