Juan Quintero

 “Food waste can be reduced when we choose to cook the whole plant instead of one part.”

Juan Quintero was born in Bogota, Colombia, in 1989. He is a renowned chef who believes in the importance of promoting food sovereignty, security, and sustainability.

After completing his culinary studies, he obtained a bachelor’s degree in gastronomy at the University of Gastronomic Sciences in Italy, where he honed his skills by working with celebrated chefs. In 2019, Juan moved to Tuscany, Italy, where he was made Head Chef of the Hotel Borgo San Felice. By 2020, the Michelin Guide awarded the restaurant a one-star rating, followed by the green star of sustainability in 2022, for the young chef’s efforts to reduce food waste and promote sustainable agriculture.

Chef Juan is also an ambassador for ProColombia, a Colombian government agency in charge of promoting local products and tourism and a platform for Juan to share his culinary philosophy: reducing food waste and advancing sustainable agriculture and ethical practices in the food supply chain.
