Recipes for Change: Licuri, chicken and rice

Prolonged drought, environmental degradation and lack of water pose many challenges to smallholder farmers in the municipality of Caldeirão Grande, northeast Brazil. Cultivating local traditional crops that are more suited to local conditions, such as licuri nuts, can help reduce the impact. With the introduction of machinery, processing equipment and training, the sale of licuri remains a major source of income for families in this community. The fruits can be eaten unripe or ripe, raw or toasted. They can also be pressed into milk, oil or used in cosmetic products.

The Recipe

Licuri, chicken and rice

Serves 6

Nutritional value per serving:

  • 1 organic chicken
  • 1 sliced onion
  • 1 sliced tomato
  • 1.5l licuri milk
  • 1kg white rice
  • 2 cilantro leaves
  • 2 crushed garlic cloves
  • Salt and pepper to taste

Cooking instructions:

  1. Combine the chicken, onion, tomato, cilantro and garlic in a pot.
  2. Add 1 litre of licuri milk.
  3. Put the pot on a low heat and cook while stirring continuously.
  4. Do not cover the pot and add water if necessary.
  5. Cook the white rice and, once done, add the remaining 500ml of licuri milk, and stir completely.
  6. Once the chicken is cooked through, serve hot with the rice.
  7. Add salt and pepper to taste.

To prepare licuri milk:

  • Soak licuri in fresh water for 3 hours.
  • Drain and blend the licuri with 1.5l of water.
  • Pass through a sieve.
